A slender, serpentine chili with sizzling spicy heat. This medium to hot pepper (about 30,000 Scovilles) hails from southern India, specifically North Karnataka. In India this is considered a medium hot pepper, but you may find this a very hot pepper! The plants are loaded with string-like peppers that curl lightly and reach up to 8 inches long but are as thin as a pencil. This is an excellent multipurpose pepper. Use it fresh, dried, or steeped in oil; the pepper lends an intensely bright red color to dishes and is considered essential for vegetarian dishes like sambar.
